With the cold days of winter upon us, there is no better way to ward off the cold than with hearty meals prepared from seasonal vegetables. One of our favorite vegetables is turnips because everything is used, greens included.
I used this recipe for Thanksgiving and not only was it easy and quick, it was delicious. Happy cooking, Deb
Ingredients: Scarlet turnips (medium size, one per person) Butter (unsalted)
Directions: Remove greens from top and peel the turnip.
Cut into slices and cover with cold water and bring to boil. Cook until tender.
Drain water and place cooked turnips on paper toweling until cold and dry. Meanwhile, wash turnip greens and cut into ribbons and set aside.
After turnips have cooled, melt butter in a skillet, add turnip slices and fry until lightly browned. Add prepared turnip greens and continue to cook until greens are tender and turnips are browned a bit more.
